The grapes are harvested by hand at optimum ripeness as determined by the sugar/acid ratio, then de-stemmed, crushed and cooled. The free run juices from the static drainers are fermented separately at 13°C from the juice. Different tanks are blended to obtain the optimum bouquet and pallet.
